How is it possible that I've made it to the age of 24 and still can not successfully make a grilled-cheese sandwich?? Does that make any sense at all? I mean, I'm a good cook, I've gotten compliments! I've been known to make two types of baked ziti simultaneously! So why is it, that when I try to make a fairly innocuous lunch, featuring no more than THREE ingredients, and that's if you're including the skillet as an ingredient, I fail MISERABLY every time? What law of physics am I breaking when I consistently achieve a sandwich in which the cheese is still icy cold and solid, and yet the bread is charred beyond all recognition? Never again will I make fun of people for not being able to make rice, because apparently melting cheese is beyond my skills.

baby youve gotta butter both sides of both pieces of bread. do each side once on medium for about 30 seconds, pressing down lightly, then turn it down and flip it a couple more times deoending on how its looking.... its a little more important to get the cheese right than the bread, because if the bread is blackened you can just run a butter knife over it a few times and problem solved.

maybe youre cooking it on too high of heat. thats what it sounds like to me.

HOWEVER, i will ask the Grilled Cheese Master who lives with me what his opinion is and get back to you. His grilled cheeses could be photographed for a magazine. Plus he doesnt even use a spatula, he FLIPS them like 3 times in the air. Fucking show off.

We'll get you to making quality grilled cheeses, I promise.
